Crispy Roasted Potatoes with Garlic & Lemon

A very simple recipe with a zingy lemony hit, potatoes with super crispy edges and a hint of garlic.

Ingredients

  • 1 kilogram potato
  • 2 tablespoons Bertolli Easy Cook
  • 2 garlic cloves
  • 1 lemon

Instructions

  1. Preheat the oven to 200C fan.
  2. Put the potatoes into a roasting dish approximately 30 x 30 then drizzle with 2 tbsps of Bertolli Easy Cook, sprinkle over the garlic & zest the lemon over the potatoes and squeeze over the juice leaving the lemon halves in the tray for extra flavour.
  3. Season with salt and pepper and then give it all a little shake around to coat all the potatoes in all the flavours.
  4. Roast in the oven for 35-40 minutes or until golden and crispy & smelling delicious.
